I have 3 of the 4 healing classes and while all have their pros and cons, each definitely offers something fun and unique.
For me, priests offer the most versatility - a large arsenal of spells, buffs and mitigation as well as two specs that allow for a variety of roles for both preventative and reactive healing. My main and my favorite by far.
I find the resto shaman very fun to play as well - Earth shield is amazing and totems offer a myriad of buffs/mitigation/utility. My primary gripe would be while chain heal is very effective for tank/melee, I find the options for healing aoe on ranged limited as they are often spread too far apart. Having that mail armor when something comes after me is a nice change from the silk robes my priest wears however.
My resto druid offers me a very different perspective as they are mostly about anticipation vs reaction - having those HoTs in place before the damage hits. While there is no mitigation, it does provide a constant buffer/stabilizer. The ability to heal on the move is great fun as well.
In the end though - it's all about your playing style and preference. While I have my favorite, I enjoy playing the different roles each one provides - not to mention how much it has helped me understand who is best suited for what role/encounter as a healing officer.
